Gong Bao Pork with Peanuts

Ingredients:

1 lb pork loin or pork chops, cut into 1 inch cubes
3garlic cloves, sliced
1 tbsp ginger, sliced
5 green onions, white part separated
1-2 dry chilies
2 tbsp vegetable oil
1 tsp sichuan peppercorns
3 oz roasted peanuts
2 handfuls of green beans, trimmed and cut into 1 inch chunks

Marinade:
1/2 tsp salt
2 tsp soy sauce
1 tsp dry sherry
1 1/2 tsp corn starch

Sauce:
1 tbsp sugar
3/4 tsp cornstarch
2 tsp soy sauce
1 tbsp  balsamic vinegar
1 tsp sesame oil
1 tbsp chicken stock

Instructions:

Mix together all marinade ingredients in a large bowl. Cut pork into strips, then cut into 1 inch cubes, then place in with the marinade.

Peel and slice ginger and garlic. Chop green onions into chunks to match the size of the pork cubes. Cut dried chilies in half and remove seeds.

Combine sauce ingredients in a small bowl and set aside. Begin heating a wok on high heat. Add the oil, chiles and sichuan peppercorns. Stir fry until chiles darken in color but not burning. Remove wok from heat if heating too fast.

Add the pork and continue to stir fry on high, stirring constantly. As soon as pork seperates, add the ginger, garlic and green onions and green beans, continue to cook until fragrant and meat is cooked through.

Add the sauce in and continue to stir. As soon as the sauce is thickened, add the peanuts and stir in. Serve.
