Simple Fried Rice

Ingredients:

2 cups cooked white rice, 12 oz
2 Tbsp vegetable oil, divided
1 small onion, finely chopped, about 4 oz
1 medium carrot, peeled and diced, about 3 oz
2 green onions, thinly sliced, about 1 oz
2 garlic cloves, minced
1 tsp soy sauce
1 tsp toasted sesame oil
Kosher salt and ground white pepper
1 large egg
4 oz frozen peas

Instructions:

If cooking rice before stir frying, make sure to spread out onto a baking sheet and let cool completely before using.

Break up rice with your hands to make sure it stir fries efficiently. Heat up 1/2 Tbsp oil in a wok on high heat until smoking. Add half the rice and cook, stirring and tossing until rice is pale brown and toasty, about 3 minutes. Transfer to a bowl. Repeat with 1/2 Tbsp oil again and the leftover rice

Add all rice back to the wok and press up against the sides, leaving a space in the middle. Add in 1/2 Tbsp oil to the center, then add the onion, carrot, green onions, and garlic. Cook and stir until slightly softened and fragrant, about 1 minute. Toss the vegetables with rice and combine with the soy sauce and sesame oil. Toss to cat and season to taste with salt and white pepper.

Push rice to the sides of the wok and add remaining 1/2 Tbsp oil. Break an egg into the center and season with salt. Scramble the egg up with the spatula and break up into small pieces. Toss egg and rice together, then stir in the frozen peas, tossing until peas are thawed and rice grains are completely separated.
