Homemade Pesto

Ingredients:

1/2 cup pine nuts
3 oz Parmesan, grated, about 3/4 cup
2 garlic cloves, finely grated
6 cups basil leaves, about 3 bunches
3/4 cup extra virgin olive oil
1 tsp kosher salt

Instructions:

Preheat oven to 350F. Toast 1/2 cup pine nuts on a rimmed baking sheet, tossing about 3 minutes in, for a total of 6-7 minutes. Transfer to a food processor and let cool. Stir in the grated parmesan, grated garlic, and pulse until finely ground, about 1 minute. Add in 6 cups basil and place the top back on. While the food processor is running, add 3/4 cup olive oil in a slow and steady stream until pesto is mostly smooth with a few very small pieces of basil, about 1 minute. Season with salt to taste.

Store with oil to cover the top to prevent oxidation in a sealed container.
