Corn Maque Choux


2 tbsp butter
1 cup finely chopped onion
1/2 cup chopped  red bell pepper
2 cups corn kernels
1 tsp fresh thyme
1/2 tsp hot sauce or as desired
1 green  onion, chopped
2 tbsp chopped italian parsley
1 tbsp chopped fresh basil
Salt, to taste


Melt butter in a skillet on medium high heat  and add the onion and saute until translucent. Add the bell pepper and saute for a couple minutes, then add the corn and cook for 2 or so minutes more. Add in cream, thyme and hot sauce, then cook until thickened.  Mix in the green onion, parsley and basil, then adjust seasonings and salt and needed. Serve.
