Dum Aloo Lakhnavi (Fried Potatoes stuffed with Paneer Kofta Curry)


2 large potatoes
1 cup crumbled paneer
1/2 tsp cumin
1 tsp garam masala

1/2 cup diced potatoes
Salt to taste

2 tbsp butter
2 cups onion puree
2 cups tomato puree
1/2 tsp garlic paste
1/2 tsp ginger paste
Salt to taste
1 tsp chili powder
2 pinches dried fenugreek leaves (I skipped this)
1 cup milk
1/2 cup cream


Clean potatoes and prick with a fork. Cook on full power for 5 minutes in the microwave, turn over and cook for an additional 5+ minutes. Soak in water, then peel off skin. Mash with a fork while still hot.

Take the mashed potatoes, add crumbled paneer, cumin powder, garam masala, salt and mix well. Dice potatoes then heat up a pan and fry until golden on all sides. Sprinkle with salt and set aside.

Make balls of mashed potatoes and flatten in the center. Stuff with a teaspoon of fried potatoes and seal the potatoes well.  Continue stuffing, then fry in a pan on medium heat with a little oil. Set aside.

Heat up a pan with butter, and saute the garlic and ginger paste, then add the onion puree. Fry until fragrant, then add the spice powder, and combine. Cook for an additional 5 minutes.

Add the tomato puree and cook until most moisture is removed and thickened. Add the milk and 1 cup of water and cook until thickened even more.  Add the cream and dried fenugreek leaves and cook for a minute or two, then add the potato balls and simmer.

Serve with gravy
