Oven Baked Asparagus Fries


3 tbsp olive oil
1 cup breadcrumbs
Flour, for breading
1 1/2 cups panko breadcrumbs
2 eggs
1 lb asparagus
1 cup parmesan cheese
1 tsp kosher salt
1 tsp black pepper


Preheat oven to 425F. Line a baking sheet with parchment paper or aluminum foil. Brush oil to prevent sticking.

Pour the both breadcrumbs into a plastic bag and seal. Roll the breadcrumbs with a rolling pin to crush breadcrumbs to about the same size. Set up plates, one with flour, one with breadcrumbs mixed with cheese, salt and pepper, and 1 with egg that has been beaten with 2 tbsp olive oil.

Remove tough bits of the asparagus by snapping one, then cutting the rest to the same length. First roll the asparagus in foil and turn to coat on all sides. Dip in egg next and coat, then roll in breadcrumbs. Pat gently to ensure that all asparagus are coated well. Place on baking sheet so that all asparagus are not touching, then bake for about 12 minutes, turning halfway during cooking.
