Chicken Salad with Walnuts and Grapes


1/3 cup + 1 tbsp mayonnaise
1 lemon, zested and juiced
Salt and pepper to taste
1 1/2 tsp chives, chopped
1 1/2 tsp parsley, chopped
1 tbsp tarragon, chopped
3 lb cooked chicken, chopped
1/3 cup red onion, chopped
1/2 cup celery, chopped
1 cup red seedless grapes, halved
3/4 cup chopped walnuts, toasted


Whisk together mayo, lemon zest and juice, salt and pepper. Sprinkle in the chives, parsley,  and tarragon and mix well.

In a separate bowl, combine the cooked chopped chicken, onion, celery, grapes and walnuts. Add in the mayo mix and fold together to combine. Season to taste and serve with salad and bread.
