Cheesy Cornbread Casserole



1 lb ground beef
1 onion, chopped
1 jalapeno, chopped
1 15 oz can enchilada sauce
1 15 oz can black beans, drained
1 tsp garlic powder
1 tsp ground cumin
1 8.5 oz corn muffin mix
1 8 oz package shredded cheese


Preheat oven to 350F.

Heat a pan on medium high with a tbsp oil, then brown the meat with the onions and peppers together. Stir in the sauce, black beans, garlic and cumin together with the meat mix and spoon into a 13×9 inch baking pan

Prepare the corn muffin batter according to package directions,  then add cheese. Spread over top of the meat mix.

Bake 20 minutes, or until a toothpick inserted in the cornbread comes out clean.
