2 russet potatoes, cut into half and cut those halves into fourths
1/4 cup olive oil
2 tbsp parsley, chopped
1/4 cup parmesan, grated
Preheat oven to 425F.
Preheat a baking sheet in a hot oven for 5 minutes.
Slice potatoes and toss with olive oil and salt. Place potatoes out on the hot baking sheet and roast for about 30 or so minutes, until potatoes are cooked, brown and crispy. Toss with cheese and Parmesan and serve.
