Chicken Fingers with Garlic Butter



4 chicken breasts
Salt and Pepper to taste
2 tbsp dried oregano
2 tbsp flour
2 tbsp butter
2 tbsp olive oil
4 plum tomatoes, skinned, seeded and diced
1 tbsp chopped garlic
4 tbsp fresh basil, chopped
2 tbsp lime juice


Cut chicken breast in half widthwise, then lengthwise into 1/2 inch strips.

Mix together the salt, pepper, oregano, and flour in a bowl then  toss with the chicken.

Heat up the butter first in a skillet, then add the oil on high heat. Fry each chicken finger until slightly browned. Add in the tomatoes and garlic and cook for 3 additional minutes. Mix in the basil and lime juice and continue cooking. Combine and serve.
