Croque Monsieur


2 tbsp butter
2 tbsp all purpose flour
1 cup whole milk
Pinch of ground nutmeg
1 bay leaf
4 slices nice white bread
4 oz black forest ham, sliced
4 oz gruyere cheese, sliced
1 tbsp melted butter
1/4 cup grated gruyere cheese
2 tsp fresh chives, chopped


Melt butter in a saucepan on medium heat and add in the flour. Cook and stir constantly for 1 minute, then whisk in the milk gradually. Season with nutmeg and bay leaf, then increase heat to medium high and boil until sauce thickens, while whisking constantly, about 2 minutes. Season with salt and pepper.

Preheat the broiler. Using 2 bread slices at a time, top with with half ham and gruyere. Top with bread. Heat up a large cast iron skillet on low heat and brush sandwiches with 1 tbsp melted butter. Add to skillet and cook until golden brown on each side. Transfer to a baking sheet and spoon sauce, then grated cheese over sandwiches. Broil until cheese is beginning to brown.
