4 oz Cream Cheese
3/4 cup Sugar, divided
2 count pie crust
1 tsp vanilla extract
2 tbsp cinnamon
2 tbsp melted butter
Preheat the oven to 350F. Combine the cream cheese, vanilla, 1/4 cup of sugar in a bowl, making sure its completely mixed. Unroll the pie crust and smear one on one side with cream cheese.
Place other crust on top and use any sized cutter you desire. Use a fork to seal the pie crust, then brush both sides with melted butter. Mix remaining sugar with the cinnamon and coat cookies. Place on a baking sheet covered with parchment paper and bake.
Bake in the oven for 12 minutes or until firm and golden.
