Papas Rellenas



2 lb mashed potatoes

2 eggs, beaten

4 tbsp cornstarch

2 tbsp olive oil

1 lb ground beef

4 tbsp sofrito sauce

4 tbsp tomato sauce

2 tsp dried oregano

1 tsp salt

Vegetable oil


Mix together potatoes, egg, butter and 2 tsp cornstarch. Set aside and cool.

Heat up a frying pan and add olive oil. Add in the ground beef and cook until no longer pink, breaking up as it cooks. Add in the sofrito, tomato sauce, oregano, salt and turn heat to low. Simmer for 30 minutes, then remove from heat and let cool.

Spread the potato mix in your hand and create an indent in the middle. Add the cooked meat mix into the dent and cover with more potato mix. Shape into a ball and dust lightly with cornstarch.

Repeat until mix is used up.

Heat up a skillet and add the oil to make a layer. Fry the potato until golden on both sides and drain. Repeat until all potato balls are cooked.
