2 whole eggs + 2 egg yolks
2 cups whole milk
1 tsp vanilla extract
Pinch of salt
Unsalted butter for cooking
8 slices white bread
Cinnamon sugar or desired toppings
Whisk together the eggs and yolks, milk, vanilla and salt until foamy. Set aside. Melt butter in a nonstick skillet until melted on low heat. Once bubbling, raise heat to medium and enough to sizzle and place 2 slices of bread into the egg mixture and turn, about 5 seconds per side. Do not allow to soak.
Remove bread from the egg mix and shake off excess. Place in the pan and cook 2 minutes or until golden brown on the bottom. Add another piece of butter to the pan, then flip and swirl to coat bottom of bread. Cook on medium until second side is golden brown. Turn heat to low and dust with cinnamon sugar, then flip and dust the other side. French toast is done when it’s pressed and springs back. Serve immediately or keep in oven to stay warm.
