7 oz mexican chorizo
2 tbsp cilantro, chopped
2 green onions, chopped
1/4 tsp salt
1 lb Monterrey jack cheese
Heat up a skillet on medium high heat. Add the chorizo and cook until well browned and most fat is burned off.
Combine the jalapeno, cilantro, scallions and salt. Add cheese and toss well.
Preheat the broiler and combine the chorizo and cheese mix. Pour into a baking dish and broil until melted and bubbling. Serve with chips and lime wedges.
