Spanish Asparagus Revuelto


Olive oil
2 garlic cloves + 1/2 tsp garlic, minced
2 cups bread cubes, cut into 1/2 inch
Salt and pepper to taste
2 oz spanish chorizo
1 bunch asparagus, cut into 2 inch pieces
1 bunch green onions, chopped
8 eggs, beaten
1/2 tsp pimenton or smoked paprika
2 tbsp parsley, chopped


Heat up a skillet on medium high heat and add 3 tbsp of olive oil. Add the garlic cloves and lightly brown and remove. Add the bread cubes and season with salt and pepper, then lower heat to medium and fry until crispy and lightly browned. Remove bread from pan.

Cut up the chorizo and fry, then add the asparagus and season with salt and pepper. Stir fry until cooked through, then ad the green onions and minced garlic and cook and additional minute.

Season eggs with salt, pepper, and pimenton. Pour into pan and cook until soft and creamy. Add parsley and serve with fried bread cubes on top.
