Homemade Pancakes


1 1/2 cups all purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
1 1/4 cups whole milk
1 large egg
3 tbsp butter, melted


Melt butter in the microwave for about 30 seconds. In one bowl, mix together flour, sugar, salt and baking powder.  In separate bowl, mix together the egg and milk. Make a well in the center of the flour and pour in the milk mixture. Whisk together the mixture until just combined. Mix will be slightly thick and lumpy but well incorporated and no flour visible.

Allow batter to sit for 15 minutes, heat up a cast iron skillet to medium high heat. Pour the batter on the skillet, about 1/4 cup at a time. Cook each side for 3-6 minutes until lightly golden brown, then flip and cook for another 3-6 minutes. Set on a plate and repeat with the rest of the batter and serve. Top with desired toppings.
