Heirloom Tomato Salad



1 lb english cucumbers, cut into 1/2 inch rounds
1 sweet onion, sliced
1 tbsp kosher salt
1 tbsp sugar
3 tbsp apple cider vinegar
1/4 cup mayonnaise
2 tbsp chopped dill leaves
Cracked black pepper, to taste
1 lb heirloom tomatoes, cut into wedges


Prepare vegetables and combine the cucumbers, onion and salt into a bowl. Stir well. Let sit for 30 minutes or until most excess moisture is drawn out. Drain and discard liquid.

Combine sugar, apple cider vinegar, mayonnaise and dill in a bowl. Season with pepper and stir. Taste and adjust seasoning as needed.
