Butter Burgers


Compound butter:
1 lb unsalted butter, softened
1 1/2 tsp fresh basil, minced
1 1/2 tsp fresh parsley, minced
1 1/2 tsp fresh tarragon, minced
A pinch of cayenne pepper
2 cloves garlic, minced
Salt and pepper, to taste

Roasted Garlic Aioli:
1 cup mayonnaise
1 tbsp lime juice
1 tsp paprika
1/4 tsp cayenne
1/4 tsp ground cumin
11 garlic cloves, roasted and chopped

2 lb fresh ground beef
4 slices cheese
4 large burger buns


Stir together butter, herbs, cayenne and garlic and season with salt and pepper. Spoon into a piece of plastic wrap and fold over and roll into a log. Chill until firm.

Blend together the roasted garlic, mayonnaise, lime juice, paprika, cayenne, cumin in a food processor until smooth. Set aside.

Preheat oven to broil.

Form beef into patties and stuff a slice of compound butter inside each and broil burgers until desired doneness. Add a slice of butter to the top of each burger, topped with a slice of cheese. Broil until cheese melts.

Serve on toasted buns with a little aioli on top of the cheese.
