Chicken and Chickpea Tagine

Ingredients:

2 tbsp vegetable oil
2 tbsp butter
1 onion, sliced thin
2 cloves garlic, minced
Salt, to taste
Pinch of Nutmeg
1/2 tsp ground cinnamon
1 tsp ground ginger
1 tsp ground coriander
1/2 tsp ground black pepper
1 1/2 -2 cups chopped tomatoes, drained of excess liquid
4  cups chickpeas, drained and rinsed
1/2 cup raisins
1/2 vanilla bean
8 chicken thighs
Chopped parsley

Instructions:

Heat up a large skillet on medium high and heat up the oil. Add in the butter, then the onion and cook until softened. Add in the garlic, salt to taste and spices. Cook, stirring for about 30 seconds to a minute. Add tomatoes, chickpeas, raisins and vanilla, then bring to a boil. Adjust seasonings as necessary and add extra liquid as well if it gets too dry.

Season chicken with salt and add to the sauce. Cover and adjust heat 5 minutes later to avoid overheating the mixture. Cook until chicken is tender, about 45 minutes. Adjust seasonings before serving then serve with couscous.
