Olive oil, as needed
3/4 cup fresh ricotta
1 oz parmesan, grated (1/4 cup)
2 tbsp chopped basil
1/4 tsp black pepper
Flour, as needed
1 8oz ball of premade pizza dough
1/3 cup tomato sauce
2 oz fresh mozzarella, grated (1/2 cup)
1 whole egg, beaten
Preheat oven to 375F. Line a rimmed baking sheet with foil and oil.
Stir together ricotta, parmesan, basil and pepper. Flour a work surface and stretch out the dough to a 12 inch round. Spread tomato sauce, then ricotta and cheese on half the dough, plus any other desired toppings, leaving 1/2 inch border around the whole pizza dough. Brush edges of dough with water and fold in half, and pinch up edges of dough to seal. Brush calzone with egg wash and place on baking sheet.
Bake for about 20 minutes or until golden. Let cool 5 minutes before serving.
