Creamy Jambalaya Pasta


1/2 lb ziti or farfalle pasta
1/2 lb smoked sausage, cut into chunks
1 cup half and half
2 tbsp garlic, minced
1/4 cup onion, chopped
1 1/2 tsp cajun seasoning
1 1/2 tsp smoked paprika
1 tsp salt
1/2 tsp pepper
1/2 cup white wine
4 tbsp tomato sauce
1 1/2 tsp parsley, chopped


Heat up salted water in a large pot and boil pasta according to box directions.

Brown sausages in a skillet on medium heat, then add the onion and saute until softened and translucent. Add the garlic and cook for 30 seconds or until fragrant.

Add white wine to skillet and deglaze pan, scraping up browned bits. Reduce wine by half, then stir in the cajun seasoning, paprika, salt, pepper, and tomato sauce. Add the half and half and allow to heat up to slight bubbling, then reduce heat to low.  Reduce mixture by half, which should take 5 minuts. Drain pasta and add back to skillet. Toss with parsley and parmesan, then serve.
