Chipolte Chicken Grilled Cheese Sandwich


1 cup cooked chicken, shredded
10-12 slices of Gruyere cheese
1/2 onion, sliced
2 tbsp butter
4 slices of bread

Chipolte Sauce:

1 chipolte chile in adobo sauce + 1 tsp sauce
1/2 cup mayonnaise
1/3 cup plain greek yogurt
1/4 cup chopped cilantro
1/4 tsp ground cumin
1/4 tsp dried dill
Kosher salt, to taste


Mix all sauce ingredients in a food processor and puree until smooth. Refrigerate until ready.

Heat up a skillet on medium heat and add 1 tbsp of butter, and onions. Cook until caramelized and softened, about 15 minutes.

Place an even amount of cheese on 2 slices of bread and top with shredded chicken and onions. Top with chipolte sauce and more cheese, then bread.

Heat a cast iron pan on medium heat and add 1 tbsp butter. Cook each side for about 2-3 minutes or until cheese is melted and bread is golden brown.
