Twice-Baked Potatoes


8 baking potatoes
3 tbsp vegetable oil
2 sticks butter
4 bacon strips, cooked crispy and crumbled
1 cup sour cream
1 cup cheddar, shredded
1/2 cup whole milk
2 tsp seasoning salt
3 green onions, sliced thin
Fresh ground black pepper


Preheat oven to 400F. Lay potatoes on a baking sheet and rub them with vegetable oil.  Bake for 1 hour, making sure that they are heated through. Remove the potatoes and lower heat to 350F.

Slice the butter and place in a large bowl and add the bacon and sour cream. Cut each potato in half and scrape out the insides into the mixing bowl. Smash the potato with the mixture and add the cheese, milk, seasoning salt, green onions, and black pepper.

Place skins on a baking sheet and fill. Top potatoes with grated cheese and bake in the oven for 15-20 minutes or until heated through.
