One Bowl Brownies

Ingredients:

4 oz 70% dark chocolate, chopped
2 oz semi-sweet chocolate, chopped
1/2 cup unsalted butter
3/4 tsp coffee granules
1/2 cup granulated sugar
1/2 cup light brown sugar, packed
2 eggs + 1 egg yolk
1/2 cup + 2 tbsp all purpose flour
1 tbsp cocoa powder
1/2 tsp salt
1 tsp vanilla extract
1/2 cup semi-sweet chocolate chips

Instructions:

Preheat oven to 350F and line a 8×8 baking dish with parchment paper.

Combine the dark and semi sweet chocolate, butter and coffee granules in a microwave safe bowl. Cover and cook in the microwave for 30 seconds and stir. Microwave an extra 15 seconds to melt the butter and chocolate entirely. Stir in sugar and dissolve completely. Let cool to room temperature.

Mix in the eggs, then fold in the flour, cocoa, salt and vanilla extract and combine until just incorporated. Make sure no flour is not visibly left, but no more. Fold in 1/2 cup semi sweet chocolate chips.

Pour batter into a baking dish and bake until a toothpick inserted into the center comes out mostly clean, about 28-30 minutes. Allow brownies to cool completely in the pan. Pull out parchment paper and cut into squares and serve.
