Pasta Carbonara


12 oz pasta, like spaghetti
1 tbsp oil
8 oz bacon, chopped
4 oz mushrooms, sliced
4 eggs, lightly beaten
5 tsp light cream
salt, and pepper, to taste
2 tbsp Parmesan cheese, grated
Basil, for garnish


Boil water and cook noodles, according to al dente instructions.

Heat oil in a large frying pan and fry th bacon, until crispy. Add the mushrooms and cook until all moisture is removed and beginning to brown. Set aside cooked ingredients in a bowl and turn off the heat.

Beat eggs and cream together and season with salt and pepper. When noodles are cooked, reserve 1 cup of pasta water and drain, then add to used frying pan. Add all cooked ingredients into the pasta and stir well. After mixing, add the cream and egg mixture and half the grated Parmesan. Stir very well and allow to cook in the heat of the noodles, should take about 1-2 minutes.

Serve with parmesan and garnish with basil.
