Chicken and Guinness Bake


3 chicken breasts, cut in half lengthwise
Salt and pepper
2 tbsp olive oil
4 garlic cloves, crushed
4 ripe tomatoes, quartered
1 package of bacon, cut into large chunks
1 can chopped tomatoes
1 onion, finely chopped
2 carrots, cut into 1 inch pieces
3/4 cup Guinness
1 tbsp thyme


Preheat oven to 350F.

Precook carrots in a steamer or in the microwave for about 2-3 minutes and set aside.

Season chicken with salt and pepper. Preheat a frying pan on medium high heat and add the olive oil. Brown both sides, about 1-2 minutes max. Remove the chicken and cook the garlic on medium for about 30 seconds, or until fragrant.

Combine the chicken, garlic, onions, bacon and tomatoes in a roasting dish. Scatter over thyme and pour Guinness over. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes or until done.
