Andouille and Beef Burgers with Spicy Mayo and Caramelized Onions



3/4 cup mayonnaise
1 tbsp lemon juice
1 tsp cajun seasoning
1/4 tsp hot pepper sauce


1/2 lb andoulie sausage, cut into 1/4 inch cubes
3/4 cup pecans, toasted and chopped
1 tsp  salt
1/4 tsp black pepper
1 1/2  lb ground beef (20% fat)

Caramelized onions:

2 yellow onions, thinly sliced
2 tbsp olive oil
3 garlic cloves, minced
1 tbsp brown sugar

Hamburger buns


Mix all mayo ingredients in a small bowl and refrigerate.

Prep and combine the sausage, pecans,  salt and pepper. Add  beef and blend completely. Shape mixture into six 1/2 inch thick patties and transfer to a baking sheet.

Heat up a large skillet on medium heat and add the oil. Add onions, garlic and brown sugar and cook, stirring often and avoid burning, about 25 minutes. Season with salt and pepper.

Clean pan, increase heat to high and cook burgers for about 3 minutes or until brown on one side.Turn over and grill until cooked to desired doneness, or about 3 minutes more for medium. Remove from heat and stack burger with onion on bottom, then burger and then mayo spread on top bun. Top with  desired toppings and serve.
