2 tsp active dry yeast
4 1/2 cups all purpose flour + extra
2 tsp kosher salt
2 tbsp olive oil
Put 1 3/4 cups lukewarm water in a mixing bowl. Sprinkle yeast over water and dissolve for about 2 minutes.
Add flour, salt, and olive oil and mix until flour is incorporated and dough is formed, about 5 minutes. Dust a work surface with flour and turn dough out onto surface and knead lightly until smooth. Cut into 4 equal pieces.
Wrap dough individually and refrigerate for several hours, overnight is preferred. You can use the dough right away if desired, does not stretch well or get as crisp crust.
Form dough balls into round balls after refrigeration and place on parchment lined or floured baking sheet. Flour balls and cover loosely with plastic wrap and top with kitchen towel. Let rise for about 30 minutes before making pizzas.
