Southwestern Chicken Salad


2 chicken breasts
1 tbsp taco seasoning
1/2 tsp cumin
1/4 tsp salt
juice of 1/2 of lime
1 tbsp olive oil
2 cups romaine lettuce, chopped
1 avacado, sliced
1 medium tomato, diced
1/2 cup black beans, rinsed
1/2 cup corn,  rinsed
1/4 cup cilantro

1/2 cup sour  cream
1/4 cup packed cilantro with stems
1/2 lime, juiced
1/4 tsp salt


Place taco seasoning, chicken breasts, cumin, salt, lime juice, and olive oil in a large zip lock bag. Mix together until combined. Marinate for at least 10 minutes.

Heat a cast iron skillet on medium high heat. Add 1 tbsp of oil and cook chicken, 4-5 minutes per side. Allow to rest 5 minutes.

Mix sour cream, cilantro, lime juice and salt in a blender until fully chopped.

Place romaine lettuce  on a salad plate and top with avocado, tomatoes, beans,  corn,  cilantro and chicken. Top with dressing and serve.
