Pumpkin Spice Caramel Banana Bread


2 cups all purpose flour and extra to coat pan
1  tsp baking soda
1/4 tsp salt
1 1/2 tsp pumpkin pie spice
1/2 tsp ground cinnamon
1/2 cup unsalted butter + 1 tbsp to coat pan
3/4 cup light brown sugar
2 large eggs, beaten
6 ripe bananas, mashed
1/2 cup caramel bits
1 tsp vanilla


Adjust rack to lower middle position and preheat oven to 350F.

Prepare a bread pan  by smearing inside with butter and coating with flour.

Combine all dry ingredients in a large bowl. Mix in mashed  bananas, butter, eggs, and vanilla until smooth. Sir in caramel bits and pour into greased bread pan. (9×4)

Bake for 60-65 minutes or until browned and toothpick comes out clean. Cool in pain until cool enough to handle, about 15 minutes. Remove loaf from pan and cool on a wire rack.
