3 large sweet potatoes
2 tbsp maple syrup
1 tbsp olive oil
3 slices bacon, fried and chopped
1 tsp dried parsley
salt and pepper to taste
Preheat oven to 425F.
Peel and wash potatoes, then cut into bite sized pieces. Place potatoes on a foil lined baking sheet.
Add maple syrup and olive oil to a large bowl and whisk to combine. Pour over potatoes and toss to coat.
Bake in oven for 20 minutes, stirring halfway.
Remove from oven and sprinkle with bacon, parsley, salt and pepper.
