Grilled Mexican Corn


1/4 cup mayonaise
1/4 cup sour cream
1/2 cup cotija or feta, crumbled
1/2 tsp ancho chili or chipolte chili powder
1 clove garlic, minced
1/4 cup cilantro, chopped
4 ears corn, shucked 1 lime, wedged


Combine mayo, sour cream, cotija, chili powder, garlic, and cilantro in a bowl. Stir until completely mixed.

Heat up a grill pan on medium high heat. Place corn on pan and cook, rotating occasionally until cooked and charred, about 8-10 minutes.

Transfer corn to a bowl and coat corn with mixture. Sprinkle cheese and chili on top and serve with lime slices.
