Mac and Cheese


8 oz uncooked elbow macaroni
2 cups shredded cheddar cheese
1/2 cup grated parmesan cheese
3 cups milk
1/4 cup butter
2 1/2 tbsp all purpose flour
2 tbsp butter
1/2 cup bread crumbs
1 pinch paprika


Cook macaroni according to package directions, then drain. Set aside.

Melt butter on medium in a medium saucepan.

While stirring constantly and quickly, add in the flour and continue to stir.until it becomes a smooth paste. Cook for about 2 minutes while still stirring. Add the milk a little at a time, stirring and allowing to absorb and bubble, then add a little bit more at a time until used up. Stir in cheeses until melted and thickened.

Preheat oven to 350F.

Add macaroni to a large casserole dish and pour sauce on macaroni, stir very well.

Melt butter in a skillet on medium hat, add breadcrumbs and brown. Spread over mac and cheese . Sprinkle with a tilly or two of paprika.

Bake for 30 minutes and serve.
