Crispy Thai Curry Lime Chicken Wings


4 lb chicken wings
olive oil
kosher salt and ground pepper
1/2 cup butter
3 tbsp thai red curry paste
1 tbsp honey
1 tsp soy sauce
1 lime, juiced and zested
cilantro, chopped for garnish


Preheat oven 425F.

Pat chicken wings dry and place in a bowl. Drizzle with olive oil and season with salt and pepper and toss.

Spread on a baking sheet and roast for 25 minutes or until skin is crispy and brown and meat is tender. Flip halfway to brown both sides.

Add butter, red curry paste, honey, lime zest, and soy sauce in a small saucepan. Warm on low heat and whisk to incorporate. Check seasonings and add salt/pepper. Keep warm.

Add mixture to a bowl and combine with wings immediately out of the oven. Squeeze lime juice and toss. Garnish with cilantro.
