Chicken Ropa Vieja


4 bone in chicken breasts
1 onion, quartered
1 green pepper, cut into pieces
1 carrot, cut into pieces
4 cloves garlic, peeled
salt and pepper

1 tbsp oil
3 garlic cloves
1 cup onion, chopped
1 red bell pepper, thinly sliced
1 cup chicken broth
1/4 cup tomato sauce
2 tbsp tomato paste
1 tsp ground cumin
salt and pepper to taste
1/2 cup capers


Add chicken in a large pot and cover with the onion, green pepper, carrot and 4 garlic cloves. Add water enough to cover the chicken, then add the salt and pepper.Cook on medium heat for about 30 minutes or until chicken is cooked.

Measure out 1 cup of cooking liquid and strain. Set aside.

Remove chicken from pot and let cool, then shred with a fork. Discard bones.

In a large sauce pan, heat oil on medium heat. Add 3 garlic cloves, chopped onions and red pepper. Cook until tender and add the shredded chicken, tomato sauce, tomato paste, broth, capers, salt, pepper and cumin. Cover and cook on low for about 10 minutes. Check seasonings and serve.
