1/2 cup flour
1/2 cup milk
1 tbsp sugar
Pinch of nutmeg
4 tbsp butter
Syrup, sugar or desired toppings
3 ripe bananas
2 tbsp unsalted butter
2 tbsp brown sugar
1/4 tsp salt
Preheat oven to 425F.
Combine eggs, flour, milk, sugar and nutmeg in a blender and blend until smooth. Also can be mixed by hand.
Place the butter in a 10 inch skillet or baking dish and place in the oven. Heat butter until melted and add the batter to the pan. Return to oven and cook for 20 minutes or until pancake is puffed and golden. Lower oven to 300 and bake additional 5 minutes. Check to make sure it doesn’t burn.
Peel and slice bananas and heat up a nonstick skillet on medium. Combine butter, sugar and salt and stir until butter is melted and combined. Add banana and cook for about 2-3 minutes per side until caramelized and softened.
Cut pancake into wedges and serve with caramelized bananas and toppings.
