*This makes 1 cookie, can be easily doubled*
2 tbsp unsalted butter, softened
2 tbsp granulated sugar
2 tbsp packed brown sugar
2 tbsp beaten egg
1/2 tsp vanilla extract
2 tbsp creamy peanut butter
1/2 cup all purpose flour
1/4 tsp baking soda
1/4 tsp salt
1/4 cup reeses pieces
1/4 cup semi sweet chocolate chips
Preheat oven to 350F. Prepare a baking sheet with nonstick spray or silicone sheet.
Whisk together butter, brown sugar and granulated sugar until light and fluffy in a large bowl. Add egg and vanilla until combined, then add peanut butter, flour, baking soda and salt. Fold in the chocolate and reeses pieces until fully combined.
Scoop the ball of cookie dough onto the baking sheet and ensure that the ball is rounded and tall.
Bake for 17-19 minutes or until edges are slightly browned. The center may be slightly undone but will set. Cool for at least 10 minutes on the cookie sheet.
