Chopped Chicken Salad with Spicy Peanuts

Instructions:

12 oz chicken breasts
1 tsp salt
1 head romaine lettuce, shredded
1 carrot, shredded
1 cup cilantro, chopped
1 tsp vegetable oil
1/2 cup peanuts
1 tsp sugar
1/2 tsp chili flakes
1/4 cup rice wine vinegar
2 tbsp orange juice
1 tbsp soy sauce
1/4 cup sesame oil

Ingredients:

Dry and trim chicken. Season with salt and pepper and pan fry or grill until cooked. Set aside and cut into small pieces. Combine lettuce, carrot and cilantro.

Heat a skillet on medium high heat with vegetable oil. Add peanuts, sugar and chili flakes. Stir until slightly browned but not burned.

Whisk together the vinegar, orange juice, soy sauce and sesame oil until combined. Check seasonings and adjust. Toss salad ingredients together with dressing and serve.
