2 lbs chicken breasts or chicken thighs, cut into 1 inch chunks
1/2 cup hot pepper flakes, find this at a Korean grocery store
2 to 3 tbsp hot pepper paste
1 tbsp soy sauce
3 tbsp vegetable oil
1/2 tsp ground black pepper
1/3 cup honey
6 garlic cloves, minced
2 tbsp ginger, minced
1 lb mozzarella cheese, cut into pieces
1 green onion, chopped
Mix together hot pepper flakes, paste, soy sauce, 2 tbsp vegetable oil, black pepper, honey, garlic and ginger in a bowl. Combine until mixture is thoroughly mixed into a paste. Add chicken and coat.
Heat up a cast iron skillet and 1 tbsp vegetable oil. Add chicken to pan and add a little water to get all the sauce out of the bowl. Cover and cook on medium high for about 10 minutes. Be careful to not let the chicken or sauce burn.
Uncover chicken and carefully stir the sauce and flip the chicken. Cook until chicken is done. Preheat the broiler while you wait.
After chicken is cooked, add sliced mozzarella cheese on top. Broil until cheese is melted and bubbling.
Remove from oven and sprinkle chopped green onions on top.
