Garlic Chicken with Orzo


1 cup orzo
2 tbsp olive oil
2 cloves garlic
1/4 tsp red pepper flakes
2 chicken breasts, cut into chunks
salt to taste
1 tbsp parsley, chopped
2 cups spinach leaves
grated parmesan


Heat up a large pot with salted water and bring to a boil. Cook orzo according to package directions. Drain and set aside.

Heat oil in a skillet on medium high heat. Add garlic and red pepper flakes and cook until garlic starts to turn golden without burning.

Add chicken breasts and season with salt and pepper if desired. Cook until lightly browned and cooked through.

Reduce heat and add the parsley and orzo. Mix in spinach and cook for an additional 5 minutes or so, until spinach is wilted. Serve with grated cheese.
