3 Bean Chili



2 tbsp olive oil
1 medium onion, chopped
1 red pepper, chopped
1 green pepper, chopped
1 jalapeno, chopped
4 cloves garlic, chopped
1 cup ale
1 32 oz can crushed tomatoes
1 14 oz black beans
1 14 oz red kidney beans
1 tbsp ground cumin
2 tbsp chili powder
1 tbsp Tabasco sauce
1 tsp kosher salt
1 cup refried beans
1/2 lb bacon, chopped


Heat a large pot with the chopped bacon in the bottom of the pan until crispy. Drain off excess oil until about 2 tbsp of fat is left. Add the onions and caramelize, the add the peppers and garlic to the pot.

Deglaze the pan with beer, add tomatoes and black/kidney beans stir to combine completely.

Add cumin, chili powder, hot sauce and salt. Combine the refried beans and simmer on low heat until thickened. Serve chili with cheese, green onions and tomatoes.
