Steak Tacos

Ingredients:

2 lb skirt steak or flank steak (I used a different cut, so the cooking method is entirely different)
salt and pepper to taste
2 tsp vegetable oil
2 cups shredded lettuce
2 tomatoes, diced
2 tbsp minced cilantro
1 avocado, pitted and sliced
1 cup shredded cheese
1 lime, cut into wedges
8 flour tortillas

Instructions:

Season steak well with salt and pepper on both sides. Begin heating a skillet or grill on high heat. When heated up, add vegetable oil. Add skirt steak to pan and cook 2-3 minutes per side. Make sure that the steak internally is at least 130F. Adjust temperature lower and cook for additional time if needed.

Let meat sit for at least 5 minutes. Slice up very thinly into slices.

Layer tacos with the lettuce, tomato, avocado and cilantro.Add steak and sprinkle with cheese and lime.
