Pork and Pineapple Stirfry




1/2 lb pork loin, trimmed
2 tsp soy sauce
1 tsp vegetable oil
1 tsp cornstarch


2 tbsp rice vinegar
1 tbsp sugar
1 tbsp soy sauce


1 red pepper, chopped
3 green onions, sliced
2 tbsp vegetable oil
2 tbsp ginger, slivered thin
1 cup pineapple, cut into chunks
3-5 red chili, cut into rings


Cut pork into thin strips. Combine the soy sauce, vegetable oil and cornstarch in a bowl and add the pork. Mix thoroughly.

Whisk together the sauce ingredients and set aside.

Cut up the vegetables, pineapple and ginger. Heat up a wok on high heat. After a minute, add oil and spread around the pan.

Add the ginger and pork first and cook for about 2 minutes, or until pork is starting to brown. Add the pineapple, pepper, green onions, sauce, and chili. Cook until pineapple is heated through and hot, about almost 2 minutes.

Serve with rice.
