Olive Oil Zucchini Bread


Butter, for greasing pan
1 1/2 cups grated zucchini
2/3 cup light brown sugar
1/3 cup olive oil
1/3 cup plain greek yogurt
2 large eggs
1 tsp vanilla extract
1 1/2 cups all purpose flour
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
1 1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1 tsp lemon zest
1/2 cup walnuts


Preheat oven to 350F. Grease a 8 inch loaf pan with butter.

Grate zucchini and add to a large bowl. Add the sugar, olive oil, yogurt, eggs and vanilla extract and combine.

In a separate bowl, whisk together flour, salt, baking soda, baking powder, lemon zest and spices. Fold the dry ingredients into the wet and add walnuts now if you are using them.

Pour batter into the pregreased pan and bake for at least 40 minutes, rotating halfway when baking. Checking after 40 minutes until a toothpick inserted comes out clean.

Let cool for at least 10 minutes. Remove from pan and cool completely before cutting and serving.
