1 lb thick sirloin
6 to 8 cups chopped greens, I used romaine hearts
1/4 cup vegetable oil
1/4 cup rice vinegar
1 tsp mustard
1 shallot, chopped
1 tbsp soy sauce
1 tbsp water
1/4 tsp black pepper
Preheat oven to 450F.
Heat a ovenproof skillet on high heat until starting to smoke. Put meat in skillet and move to oven. Roast for about 4-5 minutes per side or until 135F-140F internally.
Let steak rest for at least 10 minutes.
Wash the greens and whisk together all remaining ingredients. Adjust seasonings depending on taste.
Place greens in a bowl or plate and add steak on top. Dress with the dressing and serve.
