Stir Fried Bok Choy

12 oz baby bok choy
1/4 cup chicken broth
1 tbsp dry sherry
2 tsp soy sauce
1/4 tsp cornstarch
1 tbsp vegetable oil
3 garlic cloves, crushed
1 slice ginger, crushed
salt to taste
1/4 tsp sugar
1 tsp sesame seeds

Trim bok choy bottoms and cut in half. Rinse thoroughly and drain.

Boil about 1 inch of water in a pan and add the bok choy. Cover and cook for about a minute or two. Remove and rinse with cold water. Squeeze out excess water and drain on a towel.

Combine the broth, sherry, soy sauce and corn starch in a bowl. Prepare and ready the remaining ingredients before proceeding.

Heat a skillet on high heat and add the oil. Add the garlic and ginger and fry for about 10 seconds, then add the bok choy and sprinkle with salt and sugar for about 30 seconds.

Add the sauce mixture then stirfry for about 1 minute. Remove from the pan and sprinkle with sesame seeds and serve.
