Fried Rice

Ingredients:

2 cups cooked white rice
1 1/2 tbsp vegetable oil
1/2 onion, chopped
1/2 red bell pepper, chopped
1 carrot, grated
1 tbsp minced garlic
1/2 cup frozen peas, thawed
1 tbsp minced ginger
1 egg
1/8 cup sherry
1 tbsp soy sauce
1/2 tbsp sesame oil
salt and pepper to taste
1/4 cup chopped cilantro

Instructions:

Heat 1 tbsp oil in a wok and heat on high. Add the onion, pepper and carrots and cook until softened and starting to brown, stirring often. Remove vegetables and add to separate bowl.

Drain peas and add to skillet, with garlic and ginger. Add the rice after 15 seconds and toss. Make a hole in the center of the pan and break the egg and scramble. Stir into the rice when done.

Return vegetables to skillet and stir. Add the wine and cook for an additional minute. Drizzle with soy sauce and sesame oil, then check seasonings.

Remove from heat, stirring in cilantro. Serve.
