Sausages, at least 4 separate or two smoked sausage rings which I used
2 tbsp olive oil
1 green bell pepper, cut into chunks
1 red bell pepper, cut into strips
1 long green peppers, cut in half
1 Italian sweet pepper, cut into strips
1 can pureed tomatoes
1 1/2 tsp tomato paste
1/4 cup dry red wine
salt and pepper, to taste
Heat up a large pan or skillet on medium heat and add 1 tbsp olive oil. Cut the sausage into large chunks and fry them until turning slightly golden brown on both sides. Remove from the pan and set them aside.
Cut and cook the peppers, then only add the red and green bell pepper at first. Cook until slightly soft and set aside. Next, add the long green peppers and Italian sweet peppers and saute until softened. Add to the other peppers on the side.
Add the pureed tomatoes and cook on medium, scraping the bottom as they cook to remove burnt pieces of pepper and sausage. Cook until starting to thicken and add the tomato paste. Stir and incorporate the paste and add 1 tbsp olive oil and wine. Stir and simmer until alcohol smell is no longer strong.
After the sauce is done simmering, return all the peppers and sausage to the pan and stir. Bring the sauce to a boil, cover, then turn to low and simmer. This process should take about 20 minutes or so, or until sausage is cooked.
Taste for seasonings and serve. Garnish with feta if preferred.
