Mini Meatloaves



1/3 cup breadcrumbs
1/3 cup milk
1/3 cup parsley, chopped
1 egg
3 tbsp Worcestershire sauce
1 onion, minced
1 tsp chili powder
2 cloves garlic, minced
1 1/2 lb meatloaf mx (any ground meat will do)
salt and pepper to taste
1 tbsp vegetable oil
1/2 cup ketchup
1 tbsp light brown sugar
1 tbsp apple cider vinegar


Mix breadcrumbs, milk, egg, parsley, Worcestershire sauce, onion, chili powder and garlic in a large bowl. Add the ground meat, season with salt and pepper, Mix well and then shape into 6 small loaves.

Heat the oil in a nonstick skillet and then add the loaves. Brown for at least 3 minutes each side.

Whisk the ketchup, sugar and vinegar in a bowl and brush over the top of the meat. Add 1/2 cup of water to the skillet and cover. Cook on low until cooked, ~15 minutes.

Move the loaves to a plate, add ketchup mixture to the skillet  and cook on high heat until thick (3-5 minutes). Serve sauce with meatloaves.
